Signature Dishes: Tosa Specialties You Can’t Miss

Katsuo no Tataki – Charcoal-Seared Bonito Tataki

The star of Neboke and a true icon of Tosa cuisine.
Their Katsuo no Tataki is crafted from line-caught bonito sourced from Kochi’s pristine waters. Each fillet is seared over blazing binchotan charcoal, creating a crisp, smoky crust that reveals incredibly tender, rare flesh inside.

This is not your typical “seared tuna.”

The aroma of charcoal intensifies the bonito’s natural sweetness, while toppings like shaved raw onion, sliced garlic, shiso, seaweed, and a touch of paprika add vibrance and crunch. A generous drizzle of yuzu ponzu lifts every bite with bright acidity.
A must-try for seafood lovers.

What We Ordered: A Course Full of Umami

Today, I visited Neboke with a customer and enjoyed a beautifully curated course meal. The highlight was, without question, the charcoal-grilled bonito tataki—deeply smoky, incredibly tender, and even more delicious when served over sushi rice. Healthy, hearty, and rich with umami.
