Handcrafted Soba with Perfect Balance
What sets Sagara apart is its commitment to handmade soba crafted fresh daily from premium buckwheat flour. The soba uses an 80% buckwheat and 20% wheat flour ratio, resulting in thin, slightly short noodles with an earthy aroma and wonderfully slurpable texture.

From Classic to Creative: A Range of Soba Styles
The refined Seiro Mori (classic chilled soba with dipping sauce), the rustic inaka-style soba with its hearty, nutty flavor, and the innovative Henkari Soba—featuring creative twists like colorful three-color soba made from diverse buckwheat blends—showcase the restaurant’s depth. Each bowl offers subtle earthiness and a clean finish that pairs beautifully with their robust, soy-forward tsuyu dipping sauce. Don’t miss the sobayu, mixed with the remaining tsuyu after finishing your noodles.

More Than Soba: Seasonal Japanese Delights
Sagara isn’t just about soba; it’s a culinary haven for Japanese cuisine enthusiasts. Start with appetizers like tender chilled soba tossed in a nutty sesame dressing, or enjoy seasonal izakaya-style small plates such as grilled morning-caught conger eel (anago no shioyaki), delicate dashimaki tamago, or crispy tempura featuring asparagus and tiny scallops. Lunch sets like the Tempura Donburi Zen—tempura rice bowl served with soba, hijiki salad, and pickles—are especially satisfying. In the evening, the space transforms into a sophisticated drinking den with rare sakes like Juyondai and Ishidaya, alongside fresh sashimi.

What We Ordered This Time
Today, I visited with my colleagues and enjoyed the Kakiage Soba: hot, al dente soba in a savory dashi broth, topped with crispy kakiage fritters made from shrimp, onion, carrot, and lotus root.

My colleagues ordered the anago soba, kamojiru (duck) soba, and the three-color soba.

Authentic Flavors that Capture the Season
The authentic soba, elegant soup, and lightly fried tempura create a perfect harmony, capturing the essence of seasonal, soul-satisfying Japanese flavors.
