- Soy Sauce (Shoyu) or Miso Base – Depending on the dish, the broth may be a bold shoyu (soy sauce-based) or a richer miso-based soup, both of which provide a strong, satisfying depth of flavor.
- Well-Balanced Fat and Umami – The broth is neither too heavy nor too light, offering a perfect balance that complements the noodles and toppings. You can choose the level of chilly from non chilly to high level that your stomach and head might heat up too much.

Main restaurant is at Ginza but today went to Akasaka. Visitors are welcomed by staffs with cheerful greetings and feel very traditional atmosphere. Ordered DanDanmen, simple one but very easy to eat even normal chilly choice. Haven’t ordered but Shumai but seems also the famous dish in this restaurant.
Last but not least, they only accept Cash only!
