Yoshimaru Ramen between Emperor place and Tokyo Station
A classic Hakata-style (southern) ramen shop. Hakata ramen, counted as one of Japan’s top three local ramen styles.
Tonkotsu has a unique flavor that cannot be found in other ingredients, making it popular among people of diverse backgrounds worldwide. Its creamy, white broth is visually intriguing and sparks curiosity.
This time, I tried the pork belly Char-siu ramen, mentaiko rice, and other Hakata specialties.
The noodles are thin, and the broth is tonkotsu (pork bone), yet surprisingly light, making for a great combination. Since the portion of noodles is small, many people order extra servings (kaedama). One unique feature is that you can choose the firmness of the noodles—Japanese people tend to prefer them on the firmer side. It’s also common for people to stop by for a bowl after drinking, just before heading home.
